Launching in May 2026, our brand new Antithesis restaurant lives within the historic Royal Gorge Mansion (formerly the Robison Mansion, built it in the 1880s). Located in the Royal Gorge Region, Colorado (Cañon City), situated north of Westcliffe and east of Salida, Antithesis and the Royal Gorge Mansion are perfectly positioned at the mouth of THE Royal Gorge canyon on a pristine historic 4-acre property enclosed by a stunning circa-1880 iron fence with upwards of 80 trees, an historic fountain surrounded by cozy firepits and beautifully maintained grounds.

Summary: 

We are seeking an experienced, dynamic, and passionate Front of House Manager / Maitre d’ to lead our service operations at Antithesis. This person will bring deep knowledge of fine dining, wine, and cocktail programs, while also embracing our unconventional approach to hospitality. From managing POS and Reservations platforms like Toast and Seven Rooms, to training and inspiring a high-caliber service team, you’ll set the tone for one of Colorado’s most unique dining destinations. 

 

Key Responsibilities 

·         Greeting guests warmly upon arrival and creating a welcoming first impression  

·         Manage reservations and seating arrangements to optimize dining flow  

·         Coordinate with servers, hosts, and kitchen staff to ensure smooth service  

·         Monitor dining room activity to maintain high service standards  

·         Handle guest inquiries, special requests, and complaints professionally  

·         Maintain an organized waitlist and provide accurate wait time estimates  

·         Ensure cleanliness and presentation of the front-of-house area  

·         Supervise and support FOH staff  

·         Communicate effectively with Executive Chef regarding service issues or improvements  

·         Oversee table turnover to maximize efficiency without compromising guest experience  

·         Uphold restaurant policies, dress code, and service standards  

·         Assist with special events, VIP guests, and large party coordination  

·         Demonstrate strong knowledge of wine regions, varietals, and flavor profiles  

·         Recommend wine pairings that complement menu items and enhance the dining experience  

·         Present wine lists clearly and confidently to guests  

·         Understand proper wine service techniques, including opening, pouring, and decanting  

·         Maintain and update wine lists in coordination with Executive Chef 

·         Monitor wine inventory and communicate restocking needs  

·         Ensure proper storage and handling of wine to preserve quality 

·         Demonstrates the ability to expertly pair wines with menu offerings to enhance the guest dining experience. 

·         Provides ongoing education and updates to staff regarding wine selections, regions, and service knowledge  

·         Other duties as assigned by management

 

 

Education/Minimum Requirements 

·                     3+ years of fine dining front-of-house or hospitality leadership experience. 

·                     Strong working knowledge of wine service and cocktail development.  Level 1 or 2 Sommelier preferred. 

·                     Demonstrated experience with restaurant opening and launch. 

·                     Experience using Toast POS and Seven Rooms or similar platforms.

Working Conditions/Essential Job Functions 

·                     Must be able to stand and walk for extended periods. 

·                     Must be able to lift and carry up to 50 pounds. 

-                     Must be available to work evenings, weekends, and holidays as needed.
