Job Type: Part time, Hourly

Wage: $16-$20/hr.

Location: Canon City, CO.

Job Description

 The Production cook is the creative and innovative force behind our proprietary recipes and menus, offered in several classes of service, ranging from Coach Concessions to 1st Class Dining on board classic, 1950’s vintage railcars; managing the complete culinary operation.

Essential Functions

  • Trains and manages kitchen personnel, coordinating and supervising all culinary activities in conjunction with the Kitchen Manager and Sous Chef.
  • Builds and manages a team of food preparation staff in the production kitchen.
  • Helps manage and control food consumption, puts away orders and selects product, purchases food in conjunction with Kitchen Manager and Sous Chef. Food cost goal: 27-32%
  • Standardized production to ensure consistent quality, following recipes and structure built by Kitchen Manager and Chefs.
  • Maintains food presentation standards.
  • Ensures proper equipment operation and maintenance.
  • Ensures proper food safety and sanitation in all kitchens.
  • Supervises and manages production kitchen staff.
  • Oversees special events and catering when necessary.
  • May offer culinary instruction and/or demonstrate culinary techniques.
  • On board safety, when necessary, including an ability to direct response to injuries and emergencies in a calm, confident manner.

Education/Minimum Requirements

  • Associates degree preferred.
  • Documented training from a recognized Culinary Educational Institution, or an equivalent combination of training and experience.
  • Five to ten years of progressively responsible experience in a culinary setting, preferably across several classes of commercial, for-profit food service.
  • At least two years of experience with managing all aspects of food preparation.

Working Conditions/Essential Job Functions

  • High energy workplace, requiring a high energy work pace.
  • Able to be successful using all-electric kitchen facilities and equipment in a compact galley aboard a moving train.
  • Variable work environment; work is conducted both indoors and out under varying environmental conditions.
  • Appearance at all times must reflect a positive image of the company.
  • Company uniform may be required.
  • Fast-paced environment: subject to numerous schedule and priority changes including long days, weekends and holidays
  • This position will spend 90% of the time standing/walking and 10% sitting
  • Position requires ability to bend, twist, make repetitive motions, use hands to hold and carry items/trays, kneel, reach, push and pull.
  • Must be able to lift and carry up to 50 lbs
