Location: Canon City, CO.

Job Description:

Lead Baker / Kitchen Manager to oversee the daily operations of our kitchen and bakery at The Bean Pedaler. This is a hands-on leadership role where you will be responsible for producing high-quality baked goods, managing kitchen staff, maintaining inventory, and ensuring food safety and cleanliness standards are met. You will also collaborate with other team members to ensure smooth operation and provide customers with exceptional food experiences.

Key Responsibilities:

  • Baking and Food Preparation: Lead the preparation and baking of a wide variety of baked goods, including breads, pastries, cakes, cookies, and other menu items. Ensure consistency in flavor, texture, and presentation.
  • Recipe Development and Innovation: Develop new recipes and seasonal menu items to enhance our offerings. Stay up to date on baking trends, ingredients, and techniques to incorporate fresh ideas into the bakery’s menu.
  • Quality Control: Monitor the quality of all baked goods and kitchen products to ensure they meet company standards. Conduct regular checks for freshness, taste, and presentation. Implement improvements when needed.
  • Team Management: Supervise and train kitchen staff, including bakers, kitchen assistants, and dishwashers. Foster a positive work environment and ensure the team is motivated, efficient, and working well together. Provide ongoing feedback and guidance to help staff grow and improve.
  • Inventory and Ordering: Manage inventory levels for all kitchen and bakery supplies, including ingredients, equipment, and packaging. Place orders and maintain relationships with suppliers to ensure we have the necessary stock without overstocking or running out.
  • Food Safety & Cleanliness: Ensure all kitchen and bakery areas adhere to health and safety regulations, including proper sanitation, safe food handling, and cleanliness. Oversee daily cleaning tasks and ensure the kitchen is organized and well-maintained.
  • Cost Management: Monitor food costs, labor costs, and overall kitchen expenditures. Implement cost-saving practices where possible without sacrificing quality. Track waste and work to minimize losses.
  • Customer Satisfaction: Work closely with the front-of-house team to ensure baked goods are delivered to customers in a timely and presentable manner. Address any customer concerns related to food quality and make adjustments as needed.
  • Menu Planning and Special Orders: Assist in the creation of new menu items, plan daily/weekly specials, and take responsibility for preparing special orders or custom cakes when required.

Qualifications:

  • At least 3-5 years of experience in a bakery or kitchen environment, with a minimum of 2 years in a supervisory or leadership role.
  • Expertise in baking a wide variety of products, from pastries to breads to cakes. Strong knowledge of baking techniques, ingredient substitutions, and product presentation.
  • Proven experience managing and motivating kitchen teams, with a focus on teamwork, efficiency, and maintaining high standards.
  • Familiarity with health and safety regulations in food preparation. Ability to maintain cleanliness and enforce safe food-handling practices in the kitchen.
  • Excellent organizational and time-management skills. Ability to multitask and work under pressure while maintaining attention to detail.
  • Ability to innovate and adapt the menu to include new baking trends or customer preferences. A creative approach to menu development is a plus.
  • Ability to lift up to 50 pounds and work in a physically demanding environment for extended periods, including standing, kneading, and lifting.
  • Flexibility to work early morning hours, weekends, and holidays as needed.
  • Current ServSafe Certificate

Schedule:

  • Monday to Friday
  • Morning shift
  • Weekends as needed
