Description of Job
The Colorado Department of Corrections (CDOC) has developed the Food Service (FS) Apprenticeship Program in order to train interested and qualified individuals in correctional food service operations. This position is classified as a State Service Professional Trainee II.
This apprentice position will receive on-the-job training (OJT) in correctional food service operations, while maintaining the safety and security of the assigned correctional facility. This apprentice program provides the opportunity to gain relevant work experience toward promotion to a Correctional Support Trades Supervisor (CSTS) I in the Food Service Department.
This apprentice program supports the CDOC Mission, Vision and Values with integrity and commitment while preparing inmates for community reentry.
Under the guidance of Food Service staff, this position performs 'hands on' work alongside inmates in a locked correctional facility and is trained in the following areas:
- Safety and security in a correctional kitchen;
- Meal preparation and cooking skills;
- Proper use and control of all equipment, tools and chemicals;
- Meal service processes;
- Menus and recipes;
- Sanitation and hygiene;
- Supervision and scheduling of inmate workers;
- Special diet preparation, such as religious and medical;
- Baking and bakery operations;
- Store room processes;
- Cost controls;
- Reporting, documentation and record-keeping.
- Other duties may be assigned, as needed.
- Trains inmates;
- Enforces security procedures by conducting worksite searches;
- Performs inmate counts;
- Controls unauthorized contraband;
- Performs strip searches, cell searches, pat searches and shakedowns;
- Monitors workplace environment and inmate behavior;
- Pays close attention to changes, inappropriate activity or potential problems;
- Initiates verbal reprimands when warranted and, if necessary, physically controls inmates with the proper application of restraints or 'use of force' techniques:
- Monitors, supervises and escorts inmates according to facility policy and limits inmate access to restricted areas by monitoring work schedules;
- Verifies inmate attendance and tracks absent workers;
- Responds to emergency situations such as altercations, fires and escapes according to agency policy.
Position is subject to working additional hours and shifts to maintain safe and secure operations.
Minimum Qualifications, Substitutions, Conditions of Employment & Appeal Rights
- High School Diploma or a GED certificate.
- 3 months food service experience, education or training which includes, but is not limited to:
- Food preparation, handling, cooking, baking in a food establishment;
- Cooking for small groups (10 or more people);
- Hosting, serving, cashiering in an establishment that cooks AND sells food;
- Food and beverage hospitality/lodging/travel and tourism;
- Correctional security work.
- Must be 18 years of age, have no felony convictions or domestic violence history, and possess a valid, unrestricted driver's license.
- This apprenticeship program contains 4 distinct steps/levels. Individuals selected for the program will be reviewed by an HR professional and placed into one of the steps upon a job offer, based on *experience and/or related education.
- Step I $4697 = less than 12 months of experience
- Step II $4755 = 12-23 months of experience
- Step III $4813 = 24-35 months of experience
- Step IV $4871 = 36-48 months of experience
**Hospitality Industry is defined as: Fields within the service industry such as food and beverage, lodging, and travel/tourism.
***Correctional experience must be security related duties where primary responsibilities throughout a shift, include monitoring and controlling inmate movement throughout their daily schedules, discovering and preventing contraband and responding to emergencies; ensuring proper key/tool/chemical/equipment control, use, storage and accountability; advising inmates in matters concerning work, programs, appropriate behavior and decision making in order to prepare them for successful community re-entry.

- Willingness and ability to respectfully communicate with inmate families and the public;
- Ability to effectively communicate and work with inmates through daily monitoring in a variety of situations;
- Ability to control, direct and instruct inmates individually and in groups;
- Willingness to respectfully work with a diverse population;
- Ability to remain alert and observant throughout shift;
- Ability to conduct searches (canine, general area, metal detector, pat, perimeter, strip or vehicle);
- Ability to use fingers to detect attributes of objects such as size, shape and texture during searches and to manipulate security equipment;
- Ability to safely operate and monitor ingress and egress mechanical doors;
- Ability to learn about and facilitate the potential use of firearms;
- Ability to learn about and utilize, restraints, chemical agents, and security devices in a safe and professional manner;
- Ability to learn to operate communications equipment in a professional manner (e.g., two-way radio, telephone switchboard, public address equipment);
- Ability to use hands to seize, hold, grasp and turn objects;
- Willingness to follow chain of command and established safety and security protocols;
- Ability to quickly respond to emergencies (such as fights, medical emergencies, fires or escapes);
- Ability to use physical force to control a situation;
- Ability to climb stairs and walk on hard surfaces throughout a shift;
- Willingness and ability to work outside during inclement weather;
- Willingness and ability to adhere to the CDOC Drug Deterrence Program.

- Experience working in the *hospitality industry.
Employment history is calculated on a full-time basis (40 hours per week). Less than full-time employment is calculated on a prorated basis to determine qualifications. Successfully pass all modules of the Colorado Department of Corrections Basic Training, to include English reading comprehension, relevant competency assessments and written/practical exams in Defensive Tactics;
Possess the physical ability to successfully complete Defensive Tactics;
Lift arms above head and kick as high as own waist;
Stabilize another person to accomplish a controlled take down;
Use arms, palms of hands, shins, and feet to deliver blows;
Withstand impact (slow speed or with a safety bag) on own body from strikes/blows;
Swing a baton in a striking technique;
Rotate body 90 degrees with feet planted for striking with foot or using a defensive tactic;
Get down on one or both knees and up again with multiple repetitions;
Will be exposed to Oleoresin Capsicum during Basic Training and will be exposed while on assignment;
Must be able to see and hear in order to observe, address and respond to potential breaches in safety and security;
Seize, hold, control or subdue violent or assaultive persons and defend oneself or others to prevent injury;
Demonstrate body agility, strength of all four limbs and the ability to walk and climb stairs consistently;
Work in situations involving assaultive behavior, physical control of another person and/or restraint situations;
Deal with individuals with a range of moods and behaviors, utilizing tactfulness and a congenial, personable manner;
Work with people of the opposite sex, diverse racial ethnic groups, mentally ill and emotionally disturbed offenders;
Communicate by talking, listening and/or signaling people to convey or exchange information, assignments;
Work in an environment with fluctuating noise and temperature (hot and cold) which may include working outdoors in inclement weather and/or concrete floor/wall work settings;
Willing and able to travel;
Willing and able to work various shifts, days, afternoons, graveyards (nights) which includes a rotating shift schedule;
TB (tuberculosis) screening is required of all new employees upon hire.
Successful completion of a background investigation is required. Should applicant’s background reveal criminal charges, it shall be the responsibility of the applicant to provide the Department of Corrections with written/official disposition of any charges.
