About Us: The Royal Gorge Mansion, is a historic landmark in Cañon City, Colorado, built by Scottish immigrant Lyman Robison between 1882 and 1884. It's a well-preserved example of Second Empire style architecture, featuring a mansard roof, ornate detailing, and a grand interior. The mansion is listed on the National Register of Historic Places and is a popular venue for weddings, events. Soon to be remodel to our newly Antithesis Restaurant
Summary: We are looking for a talented, poised, and knowledgeable Bartender to join our upscale restaurant team. As the face of our bar program, you will craft classic and signature cocktails, engage with guests in an elegant and refined manner, and maintain an expert understanding of spirits, wines, and mixology. This role requires not only technical skill but also a passion for hospitality and storytelling through beverage.
Guest Interaction & Service
- Provide exceptional, discreet, and personalized service to bar guests and diners.
- Engage with guests to understand preferences and make thoughtful cocktail, wine, and spirit recommendations.
- Educate guests about our bar offerings, including tasting notes, ingredients, and preparation styles.
- Uphold the ambiance and tone of a high-end dining experience at all times.
Bar Program Execution
- Craft a wide range of cocktails—both classic and innovative—with consistency, precision, and speed.
- Prepare and present drinks according to house recipes and elevated presentation standards.
- Ensure quality and consistency in all beverages served, including wine and beer.
- Maintain impeccable mise en place: clean, stocked, and organized bar at all times.
- Manage bar inventory, assist in ordering, and minimize waste.
Collaboration & Communication
- Work seamlessly with Matre’d, front-of-house staff, and kitchen team to ensure smooth service.
- Receive and accurately process drink orders from servers in a timely manner.
- Contribute to menu development by offering creative cocktail ideas and seasonal updates.
Education/Minimum Requirements
· High school diploma
· Minimum 2–3 years of bartending experience in a fine dining, hotel, or upscale cocktail bar environment.
· TIPS certification preferred
Knowledge
· Minimum 2–3 years of bartending experience in a fine dining, hotel, or upscale cocktail bar environment.
· Deep knowledge of spirits, cocktails, wine, and beer, with a focus on quality and guest preferences.
· Exceptional hospitality skills and a gracious, polished demeanor.
· Familiarity with cocktail tools, batching, garnishes, and advanced bar techniques.
· Ability to multitask and remain calm under pressure in a fast-paced, detail-oriented environment.
· Basic math skills
· Working knowledge of bar-related POS systems such as Toast, Aloha preferred
· Experience with cocktail menu development and bar costing preferred
Working Conditions/Essential Job Functions
· This position will spend 95% of the time standing and 5% of the time sitting
· Direct contact with guests, managers, and employees
· Occasional environmental exposures to cold, heat, and water
· Must be able to lift and carry up to 50 pounds
· Jewelry should be limited and not detract from a professional appearance or interfere with job performance. The following guidelines have been established:
o Rings may be worn on no more than two (2) fingers per hand.
o Employees may wear a maximum of two (2) pairs of earrings on the ear lobe only, of a style not exceeding 1/2” in diameter or 1” in length.
